If you’re down to travel more than 15 minutes outside of the Birmingham city limits for a classic, the pancakes at Pelham Diner need to be on your list. First– the pancakes are gigantic. In lieu of a stack of hotcakes, the eatery serves up one big, golden brown, slightly thick pancake. Of course, you can order more than one, but plan your meal accordingly. You’ll want to pair your order of pancakes with strips of bacon, sausage, or one of the diner’s crowd-pleasing omelets.
