Birmingham-based Melt to open new restaurant in Auburn

Melt will be opening its fourth restaurant in Alabama.

The Birmingham-based eatery is planning an Auburn location for The Village at Samford Trace, a 35,000-square-foot high-end retail and office development, spread across two phases and four buildings.

The restaurant will be full service with a full bar, games for children, and patio seating. Melt will join Clean Eatz and Iron Tribe in Building 2 of the development, with one space remaining.

Melt was founded in Birmingham in 2014 by Harriet Despinakis and Paget Pizitz. Their corporate headquarters is located in Lane Parke with two franchised locations in Hoover and Huntsville.

Mother-daughter duo Laura Kowalczyk and Laura (Lou) Huddleston are bringing the restaurant to Auburn.

Lou, her husband and daughter have been calling Auburn home since last July. With roughly 10 years of restaurant experience, Lou found herself working at the original Melt location in Avondale and fell in love with the concept.

Melt offers sandwiches, salads, vegan cheese and gluten-free items.
