Adios, the long-awaited bar featuring Mexico city-inspired cocktails, will open in November
Adios, the long awaited cocktail bar from Jesús Méndez and José Medina Camacho, has set an opening date. The duo will open the doors to Adios on Tuesday, Nov. 1.
The bar is located in The Dagny building on 2218 1st Ave N Suite 100 in downtown Birmingham. Restaurateur Vinh Tran is also a partner in the project.
Camacho and Méndez have changed the course of the cocktail bar since it was first announced last year. Initially introduced as a margarita bar that would feature tequila-focused drinks, the team behind Adios has expanded the concept to encompass a repertoire of cocktails and spirits inspired by Mexico City.
The opening announcement for Adios describes the bar as an “interactive opportunity” for guests to experience the ingredients, music, and art of the region.
“Serving up craft cocktails, with a lesson on ingredients and spirits that might not be familiar, the menu is meant to give guests a taste of something new and fresh,” says the press release.
“Adiós is something that José and I have been wanting to do for a long time,” said Méndez, the co-founder and managing partner of Adios, in the announcement. “Our goal is to introduce new ingredients and flavors to guests, while welcoming them into a place that immediately feels like home. Hospitality and caring for others is at the root of everything we do, so we want this to be a space for people to celebrate, grieve, meet new friends, or just sit at the bar and tell us about their day.”
Both born in Mexico, Camacho and Méndez immigrated with their families to northern Alabama in the early 90s. They began working in the food & beverage industry at an early age. Together the duo have a vast resume culinary that includes a number of restaurants and honors. Méndez is the proprietor and managing partner of a portfolio of restaurants including The Louis Bar and Unos Tacos in the Pizitz. Medina Camacho, an award-winning bartender, has designed and directed a number of beverage programs in Birmingham. He leads the cocktail and wine program at Automatic Seafood & Oysters, which garnered a “Best Restaurant Bar” nomination from this year’s Tales of the Cocktail Foundation’s Spirited Awards.
The opening announcement for Adios says the cocktail bar will combine Méndez and Camacho’s professional expertise with passion for sharing their Latino heritage and culture with the larger Alabama community.
The team is still putting the finishing touches on Adios’ beverage menu, but, so far, guests can expect cocktails such as the Amour a la Mexicana with Cognac, Cynar, Mexican coffee-cola syrup, and whole egg; the Diamonds in the Rough with Old Forester 100 proof, Dom house mix, and lime; the Fo-Swizzle with Cappelletti, strawberry, rhubarb, lime, orange, Angostura, salt, and mint; and Thirteen Heaven with Joven Mezcal, Pasubio, blueberry, Epazote, lime, and tonic.
The interior of Adios pays homage to Mexico City. The walls are lined with art such as antique stained glass from a chapel in Mexico and prints from Oaxacan artist and architectural designer Pedro Pablo Ramírez Pérez Huerta. A Día de los Muertos ofrenda will offer patrons an opportunity to celebrate the life of lost loved ones year-round.
