5 reasons to love this nerdy, very Huntsville bakery
The tattoo on the inner side of Heidi Kizer’s left wrist reads “I Zn I CAN.” Zn is the periodic table of elements abbreviation for zinc, and Kizer is a biochemist turned baker/small business owner. It’s perfect ink for her.
The (translated) phrase “I zinc I can” radiates nerdy determination. And, also, the kind of levity/mantra required to wrestle the wild hydra of small business. Kizer arrives for work at her downtown Huntsville bakery, called The Bakingtist, usually around 4 a.m. and doesn’t leave until 6:30 p.m. or later.

Talking with her, two things are immediately apparent: Heidi has a big brain and bigger heart. After a couple years gaining buzz at local farmers markets with her breads, cookies and pastries, Heidi took The Bakingtist – a portmanteau of “baking” and “scientist” – brick and mortar in late 2022.
