Pickle cupcakes on the menu at Odenville bakery

There’s a new cupcake on the menu at Klarissa’s Cakery in Odenville, Alabama, and it’s one pickle lovers are going to love — and one that might have customers not quite so pickle-obsessed scratching their heads.

Klarissa Hendrix, owner of Klarissa’s Cakery, announced this week that it will be adding a gourmet dill pickle cupcake to its line-up of sweet (or in this case, not-so-sweet treats). The cupcake consists of a cornbread cake cupcake with dill pickles blended throughout the batter and is topped with a cream cheese frosting before being garnished with dill pickles and a pickle juice injector.

While Hendrix, who has owned the bakery for a year and has been baking since she was nine years old, said she knew a pickle cupcake wouldn’t be for everyone, it’s something she’s always wanted to make.

“I have always wanted to do a pickle cupcake, mostly because it is so random and not a normal flavor,” Hendrix said. “I love pushing myself to try new things, and thought this would be a funny one to try! My team and I tried a few different recipes while making this cupcake.

I knew I wanted the cake part to be more of a cornbread consistency to offset the sour pickle flavor. The only icing I thought would pair well would be a tangy homemade cream cheese frosting. Then came all of our toppings! I knew I had to incorporate the pickle juice injector along with dill pickles on top! Just to add a little something extra.”

The pickle cupcakes will be available, alongside more traditional flavors like strawberry, caramel and carrot, this week, and so far, they’ve at the very least gotten plenty of attention.

“I’ve had mixed responses, most of which are excited to try the cupcake,” said Hendrix. “A few responses are ’no way!’ or ‘not on a cupcake!’, but I knew I wanted to do it regardless of what the feedback would be. We already have people trying to order them by the dozen!”
